Easy Mornings

I've been back at work now for only three weeks and boy has it been a challenge! It feels like forever ago I was in a nightmare on bed rest in the hospital. Since returning to work I've realized that I needed to come up with a better solution for breakfast. I can no longer exhaust my checking account on the unhealthy drive thru options. Here are some easy recipes you can prepare a head of time to make your mornings go by a little smoother!


Blueberry muffins

These are great for the morning after a rough night!:)
Makes about 18

Ingredients
12 tablespoons (1 1/2 sticks) butter at room temp
1 1/2 cups sugar
3 eggs at room temp
1 1/2 teaspoons vanilla extract
1 cup sour cream (8 oz container)
1/4 cup milk
2 1/2 cups all purpose flour
2 teaspoons baking powder
1/2 teaspoons baking soda
1/2 teaspoon sea salt
1 pint of fresh blueberries


Directions
Preheat oven to 350 degrees. Line muffin pans with paper liners.

In a bowl with an electric mixer cream the butter and sugar until light and fluffy, about 5 mins. with the mixer on low add the eggs one at a time. Add vanilla, sour cream and milk. In a separate bowl mix together flour baking soda, baking powder and salt.

On low speed slowly add the dry ingredients to the wet. When mixed in fold in the blueberries with a spatula or wooden spoon. Scoop the batter into each muffin cup filling just over the top. Bake for 25 to 30 minutes until the tops are a golden color.


Breakfast Burrito
My husband made this for us the other day. He made a batch of burrito filling so big it fed us the whole week.

What you need:
10 eggs
I package of Jimmy Deans breakfast sausage
I onion
I can of green chilies
Large fajita tortillas
1/2 cup milk
salt pepper and garlic salt

What you do:
First cook your sausage according to package... saute until fully cooked.
Saute the onions with a little bit of butter or olive oil. Once tender add the green chilies and saute for another minute.

Whisk together the eggs, and milk. Season with salt pepper and garlic salt.

In a large skillet add sausage, egg, and onion mixture. Scramble until eggs are no longer running.

Fill your tortilla or refrigerate the filling for another morning!
